A very handy way of assessing students knowledge on the iPad is to use multiple choice quizzes. A number of apps will do this but the most common (and free) are Edmodo or Google forms . If you often compose quizzes for your students this chart might be handy when you are constructing them.

It tends to represent our situation with iPads in the Educational scene in the Hunter. Everyone seems to have them - every school and educational organisation (big, in other words !) - but are left to flounder and left on their own in regards support. The Victorian Department of Education has been using iPads for a while now. Here is a link to a site they have dedicated to their use. They have done trials and case studies.
